  • Avocado dip
    • 2 avocados, pitted
    • 1 cup fresh cilantro

    • 1 jalepeño, seeded and chopped
    • 2 cloves garlic
    • 2 tbsp lime juice

    • 2 tbsp water
    • Salt and pepper
  • 8 to 10 small corn tortillas
  • Feta cheese crumbles

Instructions:

  1. Preheat oven to 425 F and line a large baking sheet with parchment paper. Toss sweet potatoes with olive oil, cayenne pepper, salt and pepper and arrange in a single layer on the baking sheet. Bake for 30-40 minutes, tossing halfway through, until potatoes caramelize at the edges.
  2. Warm the olive oil for the beans in a large saucepan over medium heat. Add onions and salt to taste. Stir occasionally until onions are soft and translucent (5-8 minutes). Add cumin and chili powder and stir for 30 seconds. Pour in beans and water, stir, cover, and reduce heat to a simmer. Cook for 5 more minutes. Remove lid and mash at least half the beans with a fork or potato masher. Remove from heat and stir in the lime juice, salt, and pepper.
  3. Toast pepitas for the avocado dip in a skillet over medium heat (stir often) until they are fragrant and audible (about 5 minutes). Transfer to a bowl and set aside.
  4. Scoop avocado into a blender with cilantro, jalepeno, garlic, lime juice, water, Rise Up, salt and pepper. Blend until smooth. Add 3/4 of the pepitas and blend them into small pieces. Transfer the dip to a serving bowl.
  5. Warm tortillas in a large skillet over medium heat, flipping to warm each side. Stack them on a plate and cover with a kitchen towel to keep warm and dry.
  6. Assemble tacos and garnish with feta and remaining pepitas. Serve and enjoy.

CBD Herbed Mushroom & Brie Croissant Minis

Ingredients:

  • 4 large all-butter croissants
  • 1/2 lb chestnut mushrooms, washed and sliced
  • 1/2 tbsp olive oil

  • 1/2 tbsp butter
  • 1 tsp thyme
  • 1 clove garlic, minced
  • 8 oz brie cheese
  • 2 tbsp cranberry jam + extra for dipping

Instructions:

  1. Preheat oven to 350 F.
