CBD African Stew Juneteenth Recipe
Ingredients:
- 2 lbs meat of your choice, cut into 1/2-1 inch pieces (beef, chicken, seafood, sausage, etc.)
- 2 onions, finely chopped
- 4 cloves garlic, minced
- 1 piece of ginger, grated
- 2 tomatoes, diced
- 2 bell peppers, diced
- 2 cups assorted veggies of your choice (corn, carrots, potatoes, okra, broccoli, etc.), chopped
- 1 cup chicken broth
- 1 full dropper of Ladykind’s Wind Down Mind-Relaxing CBD Tincture
- 1 can diced tomatoes
- 2 tbsp tomato paste
- 1 can kidney beans
- 3 tbsp vegetable oil
- Spices
- 2 tsp ground cumin
- 2 tsp ground coriander
- 1 tsp ground turmeric
- 1 tsp paprika
- 1 tsp cayenne pepper
- 1 tsp ground cinnamon
- Salt & pepper
- Garnish of your choice (parsley, cilantro, green onions, etc.)
Instructions:
- In a small bowl, combine spices.
- In a large bowl, coat the meat pieces with spice blend and marinate for at least 30 minutes.
- In a large pot, heat vegetable oil over high heat. Sear the marinated meat until pieces are browned on all sides.
- Add in the onions, garlic, and grated ginger. Saute until onions are translucent.
- Stir in fresh diced tomatoes, bell peppers, assorted veggies, and tomato paste. Cook until veggies soften.
- Pour the chicken broth into the pot, and the canned diced tomatoes (with juices).
- Bring stew to a low boil, then reduce heat and simmer for 1 hour, or until meat is tender.
- Add salt and pepper to taste.
- Garnish and serve!
