Shaved Fennel Pasta w/ Mint Vinaigrette
If you’re a health nut, don’t let the title of this refreshing appetizer fool you. Rest assured, there are no carbs involved. See recipe below and add a small bowl of this (or two) to your seasonal summer charcuterie board.
Ingredients:
- 1-2 fennel bulbs
- 2 teaspoons sugar
- 3 tbsp lemon juice
- 1/4 cup olive oil
- 1/2 tsp honey dijon mustard
- 1 full dropper of Ladykind CBD Rise Up Daily Mind Clearing Tincture
- 1/2 tsp salt
- 1.5 tbsp fresh mint, chopped
- 1 tsp fresh dill, chopped
- 2 tsp shallots, minced
Instructions:
- Make the vinaigrette: Mix lemon juice, minced shallots, dijon mustard, salt, sugar, and chopped mint in a blender. In a small bowl on the side, whisk CBD and olive oil together. While it’s running, pour the CBD + olive oil mixture into the blender.
- Use a potato peeler to shave the fennel bulbs into finely sliced pieces (they should resemble very thin pasta noodles). Chop up some of the fennel fronds and place aside.
- In a large bowl, combine fennel slices and marinade from your blender together and put in the fridge for 1-2 hours.
- Remove from fridge, toss in fennel fronds and chopped fresh dill. Transfer into smaller serving bowls and add to your charcuterie board.
Brie, Blackberry, & Honey Baguette Slices
This is perfect if you crave charcuterie items that require as minimal effort as possible, but still taste fancy and luxurious.
Ingredients:
- Baguette
- Brie
- Honey
- 1 full dropper of Ladykind CBD Rise Up Daily Mind Clearing Tincture
- Blackberries
Instructions:
- Slice baguette and toast slices.
- Slice brie and place on top of toasted bread slices.
- In a small bowl, mix honey and CBD. Drizzle a small amount of the mixture over brie.
- Place a few blackberries on top of the honey and brie and drizzle with a bit more of the honey + CBD mixture.
- Add to charcuterie board.
Shrimp Ceviche Bites
Add a little flare to your traditional summer charcuterie board with these mouthwatering ceviche bites. Here’s how.
Ingredients:
- 1 bag cooked bay shrimp
- 2 large lemons
- 1 lime
- 1 orange
- 1-2 tomato, chopped
- 1-2 jalepeno, chopped
- 1 red onion, chopped
- 2-3 avocados
- Green onions, finely chopped
- 1 full dropper Ladykind CBD Rise Up Daily Mind Clearing Tincture
- Salt and pepper to taste
Instructions:
- Chop shrimp into 1/4 inch pieces and place in a mixing bowl with chopped tomato, jalepeno, red onion, and salt and pepper.
- In a small bowl, combine citrus juices and CBD. Pour mixture onto shrimp and place bowl in the fridge to marinate for 1-3 hours. If you’re using raw shrimp, marinate for 4 hours so the acid from the fruits naturally cooks the shrimp.
- Once the ceviche is done marinating, mash avocados in a bowl with CBD until you have a guacamole-like texture.
- Spread CBD guacamole onto crackers, placing a spoonful of the ceviche on top of each.
- Arrange on summer charcuterie board and serve.
